Apple has been in Cork for 30 years and currently employs 2,800 people in the city.
In the three months from October to December last year, revenues in markets serviced by the Cork plant grew 55% year-on-year.
Apple's Senior Director for Corporate Communications Alan Hely said the company plans to increase its workforce in the city to 3,300 over the next 18 months.
Minister for Jobs, Enterprise and Innovation Richard Bruton and senior officials in IDA Ireland have been involved in meetings on the project in Ireland and with Apple management in the US over several months.
IDA Ireland Chief Executive Barry O'Leary said: "This development continues the strong trend of investment over the past years in Ireland, in particular from global ICT companies and demonstrates Ireland's continuing success in attracting FDI additional investment."
Wexford employment fair
Over 400 jobs will be on offer at an employment fair in Wexford this weekend.
National and international companies will be attending the Employment and Advice Fair, recruiting for job vacancies in Ireland, particularly in the Wexford area.
Zurich Insurance, Datapac Ltd, Quest Software, Aldi and Comfort Keepers are just some of the companies that will be attending the event.
The employment fair opens at the Wexford Opera House at 3pm.
Jobs available include store managers, IT support and homecare assistants, as well as positions in sales, finance and housekeeping.
There will also be a number of companies and agencies from other countries, including the Czech Republic, Poland, Norway, Sweden and Britain to advise their own nationals and Irish people who are interested in employment options abroad in construction, IT and healthcare.
